The perfect way to make bacon for a crowd: in the oven!.
This method works best using lean bacon. If using fatty bacon, pour off excess fat before switching racks.
PREP: 10 minutes
BAKE: 25 minutes
1.5 lbs of sliced bacon
2.5 teaspoons coarsely ground black pepper
Preheat oven to 450°F. Arrange bacon slices in 2 jelly roll or roasting pans, overlapping
the lean edge of each slice with the fat edge of the next.
Evenly sprinkle pepper over bacon slices. Place pans on 2 oven racks,upper and lower,
and bake for 25 minutes. After about 12 minutes, switch pans.
Bake until bacon is golden brown and crisp. Remove bacon to paper towels
to drain; keep warm. Makes 12 servings.
Each serving: About 90 calories, 5g protein, 0g carbohydrates, 8g total fat,
(3g saturated), 13mg cholesterol, 255mg sodium
